Recipe for Bhindi/Okra Fry
Ingredients:
Bhindi 15
Gram flour 2 tbsp.
Rice flour 2 tbsp.
Turmeric powder ¼ tsp.
Red chilly powder 1 tsp.
Dried mango powder ¼ tsp.
Salt as per taste
Oil for deep frying

Method:
Wash bhindi and dry well. Cut bhindi lengthwise into 4. Mix all the remaining ingredients and add it to the bhindi. Keep the mixture dry.

Heat the oil in a deep pan on medium high flame. Once the oil is hot add bhindi into the oil. Do not overcrowd the oil. Divide the mixture into batches as per the oil quantity and pan size. Once bhindi turns into golden colour take it out from the oil.

Kurkuri crispy bhindi fry is ready.

Recipe for Dal
Ingredients:
Toor Dal 1 cup
Onion 1
Tomato 1
Green Chilly 1
Turmeric powder ¼ tsp
Salt as per taste
Water 4 cups
Curry leaves 12
Mustard seeds ½ tsp.
Cumin seeds ½ tsp.
Asafoetida ¼ tsp
Ghee 1tbsp.

Method:
Wash toor dal and soak it in water. It is completely fine if you do not have the time to soak the dal as we will be cooking the dal in pressure cooker. Add dal in pressure cooker, then add the sliced onions, chopped tomatoes, slit green chilly, turmeric powder and salt. Add water and cook the dal for about 3 whistles.

Once the dal is cooked we will start with the tempering. In a small tempering pan add ghee. Once the ghee is hot add mustard seeds, cumin seeds and asafoetida. Once the mustard seeds pop add curry leaves. Add the tempering into the dal and let the dal come to a boil. You can adjust the consistency of dal and check for salt during this time. Dal is now ready.

Serve hot dal and crispy bhindi fry with steam rice, papad and pickle. Enjoy your meal!!
