Tomato Peanut Chutney

Tomato Peanut Chutney is a good accompaniment with the south Indian breakfast recipes like dosa & idli. If you do not have coconut at home or think scraping the coconut is a task then peanut chutney is your friend. The nuttiness of peanuts give the chutney a rich flavour, the tomatoes & tamarind provides the required tanginess & the red chilli powder provides the required spiciness. Next time you want to make chutney you should try out peanut chutney.

INGREDIENTS:

Peanuts – ½ cup

Oil – 3 tsp

Ginger – 1 inch

Tomatoes – 2 roughly chopped

Tamarind – 1 tsp

Kashmiri chilli powder – 1 tsp

Salt – as required

Water – as required

Mustard seeds – ½ tsp

Curry leaves – 8 -10

METHOD:

  • In a pan first dry roast the peanuts until they are crunchy.
  • Take it out and let it cool down. In the same pan add 2 tsp of oil. Add the sliced ginger and fry for a minute.
  • Now add the roughly chopped tomatoes & cook it till they become soft & mushy. You can cover with a lid and cook the tomatoes.
  • Once the tomatoes are cooked add the tamarind, Kashmiri red chilli powder and salt.
  • Cook for another minute & let it cool down to room temperature.
  • Add the required amount of water & grind the peanuts and the tomato mixture together to get a smooth chutney.
  • Now for the tempering, add 1 tsp of oil in a tempering pan. Once the oil is hot add the mustard seeds & curry leaves.
  • Add the tempering to the tomato peanut chutney.
  • Serve the chutney with any south Indian breakfast recipes & enjoy.
